Trans-2-hexenal is an unsaturated aldehyde with an apple flavor. Trans-2-hexenal is produced by soybean plants and is also a sex pheromone produced by female hairy moths.
Chemical Properties: Light yellow liquid. It has a rich aroma of fresh fruits and green leaves. There are two isomers, cis and trans. The boiling point is 150~152℃, or 47℃ (2266Pa), and the flash point is 37.8℃. Soluble in ethanol, propylene glycol and most non-volatile oils, very slightly soluble in water. Natural products are found in oils such as tea leaves, mulberry leaves, and radish leaves, as well as in cucumbers, Chemicalbook apples, peaches, orange peels, strawberries, egg fruits, papayas, etc.
Usage GB2760～96 stipulates that the edible spices are allowed to be used. Mainly used to prepare raspberry, mango, egg fruit, apple, strawberry and other flavors.
This product has a fresh green leaf fragrance and can be used to blend artificial flowers, essential oils, and various floral fragrances. Some derivatives of green leaf aldehyde are also fragrances, such as dimethyl acetal and diethyl acetal of green leaf aldehyde; trans-hexenol (green leaf alcohol) produced by hydrogenation of green leaf aldehyde, and trans-hexenol (green leaf alcohol) produced by oxidation.
