Propylene glycol alginate, referred to as PGA, belongs to the alginate esters. Part of the carboxyl groups of alginic acid are esterified by propylene glycol (more than 90%), and the remaining 10% of the carboxyl groups are free or neutralized by alkali. Propylene glycol alginate is made from alginic acid extracted from natural seaweed through deep processing. Appearance is white or yellowish-white powder, almost odorless or slightly aromatic, tasteless, hygroscopic, easily soluble in cold or warm water to form a viscous colloidal solution. Insoluble in methanol, ethanol, benzene and other organic solvents. Relative density 1.46. When heated to 155℃, the color turns brown, to carbonization at 220℃, and to ashes at 400℃. The viscosity is constant when the content is 1% or lower. The aqueous solution is stable below 0℃, but the viscosity decreases sharply at 100℃. Adding acidic agents can increase its viscosity. It has strong acid resistance but poor alkali resistance, and its viscosity is stable for a long time in the pH range of 3 to 4. It is most stable at pH 2 to 3, and easily decomposes at pH > 6.5. Therefore, it has a good protein stabilizing effect under acidic conditions, and also has a unique foam stabilizing effect. However, if this product is stored at higher temperatures for a long time, it will gradually become an insoluble substance. It can be used in cream condiments to help emulsify fat and diffuse flavor. The dosage is 0.8%. It can also be used in seasonings for meat products at a dosage of 0.5%, and in frozen fruit fillings at a dosage of 1%.
