Polyglycerol polyricinoleate typically used in chocolate & coatings to reduce the yield value. This product is also applied in other food applications as emulsifier.
Polyglyceryl-3 polyricinoleate ("PGPR") is a food additive used to keep emulsions of oil and water systems with a high moisture content stable and as a viscosity regulator. In the chocolate industry, PGPR is used because it leads to a significant reduction in the yield stress of the molten chocolate. This allows the chocolate to be molded without any air bubbles, particulate ingredients to be coated more easily, and the thickness of the chocolate coating can be optimally adjusted.
