Application

Isomaltulose is another sugar substitute, and non-cariogenic substance.

With a molecular weight of 342.30, it exists naturally in sugarcane juice and honey only at trace levels and has good safety. Different from sucrose, the disaccharide bond changes from (1→2) to (1→6), which is also the transformation of non-reducing disaccharide (sucrose) to reducing disaccharide (iso-sucrose), and its reducing property is about 52% of glucose. Germany first made its crystal in 1957, and named it Pa1atinose after the local place name Pa1atin, Chemicalbook is a white crystal, sweet and odors, sweetness of about 42% of sucrose, pure sweetness, and sucrose is basically the same, its biggest feature is anti-caries, can be enzymatically hydrolyzed in the intestine, slowly absorbed by the human body.
