Annatto is a kind of edible yellow-orange pigment. Used in Western desserts, ice cream, butter, margarine, oil, corn flakes, shortening, salad oil, bread, macaroni, pastries, beverages, ham, sausage, cheese, etc. Used together with tar pigments in Vienna sausages (it is easy to fade when used alone). There is no limit on the use of water-soluble products. When the pH value is below 7, the annatto will condense and should be used at a pH value of about 8.0.
