Nature：
White crystalline powder. The relative density is 1.86 and the refractive index is 1.510. Easily soluble in water (10g/100mL, 20℃) and ethanol. It is hygroscopic, and the aqueous solution is acidic. The pH value of 1% water is 4 to 4.5. It decomposes into sodium metaphosphate at 220°C. When the aqueous solution is heated with dilute inorganic acid, it is hydrolyzed into phosphoric acid. Sodium acid pyrophosphate is slightly hygroscopic and forms six crystalline hydrates after absorbing water. When heated to above 220°C, it decomposes to form sodium metaphosphate.

Preparation method：
Add food-grade soda ash to the neutralizer, heat and dissolve with stirring, then add food-grade phosphoric acid for neutralization reaction, control the reaction endpoint pH to -4~4.4, and generate sodium dihydrogen phosphate. Filter the solution at 70~80°C. The filtrate is evaporated and concentrated, cooled for crystallization, centrifuged, and dried and dehydrated at 95°C to become anhydrous sodium dihydrogen phosphate. It is then heated at 140 to 200°C for polymerization and converted into disodium dihydrogen pyrophosphate.

Use：
Used as buffering agent, leavening agent, adhesive, stabilizer, chelating agent and emulsifier. Our country stipulates that it can be used in bread and biscuits, with a maximum usage of 3. og/kg; meat products: lg/kg; fruit and vegetable peeling GMP. It is generally not used alone, but is often used in combination with the alkaline salt sodium pyrophosphate.
